Paprikás Krumpli
Hungarian paprika potatoes with sausage — one pot, thirty-five minutes, absurdly good.
Method
- Heat the oil in a wide pot and cook the onion over medium heat until soft and translucent, about 6 minutes.
- Pull the pot off the heat, stir in the paprika, and let it bloom for 20 seconds — burnt paprika turns bitter.
- Add the sausage, pepper, and tomato. Return to the heat and cook for 3 minutes.
- Add the potatoes and enough hot water to almost cover. Season generously.
- Simmer uncovered for 20-25 minutes, until the potatoes are tender and the liquid has thickened into a sauce.
- Rest for 5 minutes off the heat, then serve with a spoonful of sour cream.
The sauce should coat the potatoes, not drown them. If it looks thin at the end, mash a couple of potato chunks against the side of the pot and simmer for two more minutes.
Make it vegetarian: skip the sausage and add a teaspoon of smoked paprika plus a tin of drained white beans in the last five minutes.
